Seasoned Rice (microwave version)


This is a simple, easy to make, flavorful side dish.

You can also use brown parboiled rice with good results.

Ingredients:

  • 1 cup parboiled rice (uncooked)
  • 2 TBS butter, margarine, or olive oil
  • 1/2 cup chopped onion
  • 1 can (4 oz) sliced mushrooms, drained
  • 1/2 tsp ground thyme
  • 1/2 tsp ground sage
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 2 bouillon cubes or 2 tsp instant bouillon (vegetable, chicken, or beef)
  • 1 TBS soy sauce
  • 1/2 tsp paprika
  • 1/4 tsp ground nutmeg
  • 2 1/2 cups water

Directions:

  1. Combine all ingredients in a microwave safe bowl.
  2. Cook uncovered until water is absorbed, about 18 minutes.
  3. Let stand for 5 minutes.
  4. Fluff with a fork and serve.
