Thumbprint Cookies


This is a fun cookie to make with the kids. They will love the part where they get to help by denting the dough with their thumb. Older kids can also fill the dents with the fruit preserves.

Ingredients:

  • 1/2 cup butter, softened
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1 egg
  • 1/2 tsp almond extract
  • 1 cup flour
  • 1 egg white
  • 1 TBS water
  • 1 cup chopped nuts or crushed peanut brittle
  • raspberry jam (or other fruit preserves)

Directions:

  1. Cream together first 5 ingredients with an electric mixer, for about 2 minutes.
  2. Sift in the flour and stir.
  3. Combine egg white and water.
  4. Chill dough for an hour, for easier handling.
  5. Roll dough into balls and dip in egg mixture.
  6. Roll dough balls in chopped nuts.
  7. Press thumb into dough balls to make dents.
  8. Fill dents with preserves.
  9. Bake at 375°F for 10 minutes on a greased pan.
